- 1 bottle of prosecco, chilled
- 2 T simple syrup
- 1 C honey
- 3 C water
- 2 whole ripe pears, peeled, seeded, and chopped
- 1 thumb of fresh ginger, peeled and diced
- 10 large sage leaves
In a saucepan, add honey and water and stir. Bring it to a boil and reduce to a simmer. Add the pears, ginger, and sage. Simmer for 15-20 minutes. Remove from the heat and let it stand for 10 minutes. Discard the pears, ginger, and sage. Cool the syrup. Add 2 oz. of syrup to champagne coups and top with chilled prosecco.
It also makes a great bourbon cocktail!
