Pineapple Tepache

A little sweet, a little funky, a little fizzy, and a lot refreshing!


4 ½  C. warm water

1 ripe, fresh pineapple

1/2 C. brown sugar

1 cinnamon stick


Combine warm water and brown sugar to dissolve. Cut the top and bottom off the pineapple and cut off the outer peel, all the way around. Cut peeled pineapple into 1/4s and add pineapple quarters and peel into sweet water. Add Cinnamon stick. Cover with a towel and leave on the counter for 24-36 hours until it begins to froth. Strain into a pitcher and refrigerate to chill before serving, do a taste test. Add water or brown sugar to taste and serve over ice with pineapple chunks!

***add 1-2 oz light or dark rum and enjoy!
